With their outer shell removed, green pumpkin seeds (a.k.a. pepitas) are pleasantly chewy and have a mellow, nutty flavor that's made them a popular snack dating back to the ancient Aztecs. These are roasted and salted to be even more gratifying.
They may have origins in Mexico, but pumpkins-and their seeds-were an essential part of The Three Sisters (along with corn and beans) for the Native Americans, who were savvy enough to use every part of the fruit in one way or the other. Even farther back, Aztecs would dry the seeds in the sun to transform them into longer-lasting fuel for never-ending journeys.
